Office Life – WIAW

Here is my first WIAW : What I Ate Wednesday Post ! 🙂 Hope you all like it!

SO! I didn’t take pictures of my snacks so I’ll just link it for you.

Breaky was a pretty standard for me (eggs in some form) – 2 hard boiled eggs PLUS AVOCODO ! 🙂 Mmmm


I usually don’t get hungry between breakfast and lunch because I’m normally consuming a lot of the water I drink during that time. Either hot, warm, or cold water — that’s a story for later ;-P ( my tummy feels better with warmer water)

For lunch I had this amazing salad I came up with. Here is the recipe:

  • Romaine lettuce
  • Spinach (on the bottom in the picture)
  • Hearts of Palm (obsessed- I get it at Trader Joe’s)
  • Dried Apricot
  • Dried cranberries or pomegranate (I had both in the below salad)
  • Cucumbers (underneath)
  • Crumbles of Goat Cheese ( can sub Feta or Gorgonzola – whatever you like)
  • —-I topped it with Raspberry Vinaigrette! YUM !


After lunch, I snack on a White Chocolate Luna Bar– this is my fave one by far.

I also had Cucumbers dipped in Honey Mustard……. don’t ask 😛 It’s delish.

For dinner- I decided to do some more meal prepping since I was running out of the salads. I made stir fried tofu with a mix of brocolli and cauliflower. I added himalayan salt to both as well as some Garlic Lovers Flavor God.

Not the prettiest pictures in the world but my kitchen was dark since I was making it at around 8:45pm at night after I got home from the gym.
